- 2 peppers, sliced
- 1 aubergine, diced
- 2 courgettes, sliced
- 3-4 portobello mushrooms, diced
- Oil for cooking
- Salt and pepper
- Atkins and Potts Roast Garlic & Balsamic Dressing
- Mix all the vegetables in a bowl with salt, pepper and a good drizzle of oil.
- Place onto a baking tray and roast at 180°C for 30-40 minutes or until soft and the edges are golden brown.
- Remove from the oven and place into a serving bowl.
- Generously drizzle with Roast Garlic & Balsamic Dressing.
