Braised Red Cabbage

Red cabbage roughly 700g, thinly sliced or shredded
Knob of unsalted butter
2 tbsp of olive oil
1 red onion, finely diced
3 tbsp of good quality marmalade
60ml of Just A Splash Port
1 orange zest
salt and pepper

In a large saucepan heat the butter and the oil together until melted and hot. Once hot add the onions and fry for a few minutes to soften, add the cabbage and fry for a further 3 minutes so that it’s cooked slightly and glossy.

Add the port and sizzle away the alcohol, pop a lid on the pan and cook for a further 20 minutes. Once soft add and stir in the marmalade tasting as you go to either add more or not. Finish with salt and pepper and a good zest of orange and serve.
